If you're referring to the window decorations (the toolbars, status
bars, rulers, scrollbars, etc.), I think you're thinking of
changing your GTK "theme." You can visit http://gtk.themes.org/
for dozens of pre-built themes for GTK. gtk.themes.org also
has instructions for creating your own themes.
If you wish you change the colors of the text in your document,
select the text you wish to change, and choose "Font" from the
"Format" menu. In the dialog that will appear is a Color tab,
from which you can select a new color.
